Classic Southern Sandwiches…

IMG_2595Classic Southern Sandwiches… A whole new category of Southern food began with the advent of the pre-sliced Pullman loaf of bread. If you were driving through Birmingham late at night years ago, you could see the fires of Sloss Furnace and smell the delightful aroma of fresh baked bread! Dainty Sandwiches were served in the nursery all the way to the grave as funeral food. Whole generations of children learned their shapes from dainty crustless sandwiches- rectangles, squares, triangles and circles. Dainty sandwiches, easy to pick up and digest- well, they became a perfect funeral food- with fillings to die for… Generations of school children had crustless Peanut Butter and Jelly Sandwiches packed in brown bags- I know this because my best friend in second grade- lorded over me with hers by slowly mashing the filling up to the edge of her triangle and batting her pale blue eyes at me, then she would run out her little pink tongue and lick it off, while I was at the mercy of the lunch ladies to fix my plate with arguably the finest food in the region at Minnie Holman Grammar School. I do admit to trading a big warm yeast roll for a half of her dainty crustless sandwich!  Crustless Sandwiches became known and revered as Tea Sandwiches. The finest cooks took almost as much time decorating Tea Sandwiches as they did icing Petit Fours for Afternoon Teas, Coffees, Bridal Tables and Ladies Luncheons. In fact our Southern mothers insisted on removing the bread crusts for dainty sandwiches and for toast points- leaving the crust on- just wasn’t done. However, two Classic Sandwiches did allow for crusts and were often eaten- privately (I’m sure) or by common folk who had the nerve to leave the crusts on…these two classic sandwiches are revered by Southerners- the Tomato Sandwich and the Classic Bacon, Lettuce and Tomato Sandwich. I do not know of a Southerner who doesn’t love a summer Tomato Sandwich above all others, but will turn their nose up if tomatoes are not in season. Second on the favorite sandwich list has to be the Classic BLT.IMG_2596   Now, I know there are Designer Versions out there and yes, some are very good- the problem is- once you veer away from Bacon Lettuce and Tomato- you don’t have a BLT anymore! Now, before summer tomatoes get ripe and for the few short weeks they are available to us, still warm from the vine- Southerners console ourselves with a hothouse tomato or maybe an early tomato shipped from Florida- but we know it won’t taste right in a Tomato Sandwich. Here’s the solution- what seems like an interminable period of time, when the tomato plants are in the ground and the flowers are set…on a warm sunny day- we dream of a Tomato Sandwich but we whet our appetites with a Bacon Lettuce and Tomato Sandwich. We actually leave the crusts on! Let me describe a real one…

  • There cannot be enough Bacon- some like it thin and crisp- others like it on the thick side but the main criteria is that it must be fully cooked and drained on paper towels.
  • While I have developed a taste for a healthier light wheat bread- Purists insist on Merita® or Bunny® Bread- the much maligned white bread is just right for a Summer Tomato Sandwich, however we never eat a BLT without Toasted Bread!
  • Smear the toasted bread with Mayonnaise lemon-y and smooth- preferably homemade.. I know, I know- I’m just going for perfection here (find a commercial mayonnaise with lemon juice in it and add a squeeze or two and maybe the Grand Southern Ladies won’t notice!
  • Cool, Crisp Crunch Lettuce on each side of the mayonnaise-d toasted bread.
  • Take the best firm Tomato you can find.  I prefer to slice the Tomato into a medium slice, some prefer thinly sliced- but the main requirement is to make sure there is enough Tomato to cover the surface so there is tomato in every bite.
  • Fresh Cracked Black Pepper is a really nice touch, but regular pepper is a must, then just enough Salt to offset the less than perfect not-quite-summer Tomato.
  • Now, you cannot eat a BLT whole, but please carefully cut this Classic Southern Sandwich on the diagonal before you eat it.
  • Golden Flake Potato Chips are the perfect side and made right here in Alabama.
  • And I am not opposed to a garnish of a perfect boiled egg dusted with paprika or a spicy pepper, but please not in or on the Classic BLT. IMG_2597

Our weekly household helper, Bea, occasionally made BLT sandwiches for me starting when I was four when my sister was in ‘big school’ and Momma was on her weekly shopping trip downtown- Bea wrapped the whole BLT in an amazing fashion with wax paper, then with a serrated knife cut right through the paper and sandwich- into those perfect triangles. Somehow she turned back the wax paper to catch the drips- telling me-

‘Now, missy if you gone eat this sam-ich, you gotta have it wrapped or the juices gonna run down yo’ ah-rm, and yo momma gonna whup me and you bof-h!’

Bea was right about those juices- I’m doubtful my sweet momma would’ve laid a hand on either one of us! You might want to diaper your BLT with a nice paper napkin…or shoot…just go ahead and let the juices run down your arm! On warm Spring days- I hope you will enjoy a Classic Southern Sandwich- the wonderful Bacon, Lettuce and Tomato! Love y’all, CamelliaIMG_2595

Thorns- a prayer…

IMG_2583Thorns, in Scripture symbolize troubles. Troublesome people, troublesome habits and troubled people.

  • And, being cast out of the lush Garden of Eden- God told them..’ Thorns and thistles shall the earth bring forth…’ Gen. 3: 18-19
  • ‘Other seed fell in the midst of thorns and the thorns grew up alongside and choked the good plant…The seed that fell among the thorns, these are the ones who- as they go their way are choked and suffocated with the anxieties, worries, cares and responsibilities of this life…’ Luke 8:7,14
  • ‘And you, son of man, be not afraid of their words; though briers and thorns are all around you…be not afraid of their words or dismayed by their looks…’ Ezekiel 2:6-7
  • Three times the Apostle Paul asked for his Thorn in the Flesh to be removed, ‘a thorn… a messenger of evil, sent to rack, buffet and harass me’ ..ultimately the thorn remained. Paul changed his mind: ‘I am quite happy about the thorn, and about the insults and hardships, persecutions and difficulties; for when I am weak, then He is strong…the less I have, the more I depend on Him’ 2 Cor. 12:10.
  • A blind and heartbroken George Mattheson wrote: ‘My God, I have never thanked Thee for my thorns, I have thanked Thee a thousand times for my Roses, but not once for my thorns…Teach me the value of my Thorn.’
  • ‘…and weaving together a Crown of Thorns, they began to mock him, struck His Head and spat on Him, making sport of Him…’ Mark 15:18-19

IMG_2591Lord Jesus, as daffodil trumpets herald the beginning of Spring and the Dogwood dares to bear blood tinged white blossoms centered with a Crown of Thorns- we know that it not right for so many of us to be wracked with mental agony, fearful of the future and plagued with anxious fretful minds. Too often we are tired, worried with the strains of life, burdened with responsibilities, splintered by hurtful words, choked out and suffocated by prickly concerns in lives too full and complicated. Thorns…stunt our growth, halt our progress and reduce our growth and productivity. So we pray with heavy hearts, bringing burdens we have tried to shoulder on our own- yet even as we lay them before You, plead for relief, recount the burdens once again…something strange inside of us begins to gather our troubles back up again-

  • re-packaged belongings,
  • re-purposed fears,
  • thick envelopes of worry,
  • bags of the same old anxieties

Believing our concerns are not worthy of Your Glorious attention or- worse without a mustard seed of Faith or the Patience to wait, we wonder if we ever really believed Your Divine Power would be exerted on our behalf.  Why is it Lord, we are caught in thickets of calendars crammed too full, bristling while we wait in a line, harassed in heavy traffic, suffocating from social obligations, drowning in debt or choked out expecting too much out of life? We are worn out trying to organize what we already have. Will we ever be free of the need for more when there’s no time to take care of the gifts You have already given?

We live in a briar patch of stress and strain, fretting foolishly, harboring broken promises, words spoken in haste, small slights or outright rejection- jeers of foolish beings who feel superior only when they’ve put others down; these are Thorns in our flesh, Splinters in our hearts-Dry parched lips from sweat filled nightmares- we’ve all felt them. How can we ever think our Cross-Slain Savior doesn’t know how it feels? Yet, our Divine Friend, You do, if Anyone ever has known, You know. IMG_2589

As the earth begins to thaw… as Easter draws near, we see the everlasting sign- the Crown of Thorns within Dogwood blooms. Let every sense available bring forth Golgotha- the odor of sweat mingled with fresh Blood, bitter gall, vinegar and dried spit, the agony of humiliation; loud boisterous gaming for a White Robe, heinous laughter and coarse jeers. The sky darkens, You know- if anyone knows, You know deserted loneliness when Heaven’s Angels turn their backs on You; You know rejection-even Your own Father has forsaken You; Yes You know. Let us remember anew, throughout all Eternity…You know exactly what humanity feels. Of all of the suffering wounds, perhaps the most worrisome encircles Your Head- A Crown of Thorns…

  • ‘John, take care of My Mother’
  • One thief accuses, ‘You saved others, You can’t save us!’
  • Another pleads- ‘I’m dying, Lord…don’t forget me..’

Even in the Sacrificial Dying- the constant strain, the needs of others were piercing Your Mind…In every way, You understand the human dilemma. We ask You then, to teach us how to live in the thicket of thorns, how to grow in expectant joy- right in the midst of stress and strain; and as we exist in this troubling human condition, help us to find ways to be gentle, affectionate toward one another and always thankful for our thorns. Give us strength to explore the depths of pain and find blessings there. Teach us the value of our thorns. Allow us not to be strangled by circumstances and suffocated by life. Provide ways, in quiet stillness, to find our peace in Thee. Fill us with the peace that passes all understanding in the midst of our chaotic thorny paths fraught with worrisome distractions. Help us to do our part to simplify our lives. Teach us the secret of serene living: Each day has potential to bring so much joy among life’s aggravations. May we know without question that You are an understanding Savior, in Whom we have:

  • unfailing Mercy,
  •  Divine Strength,
  • abundant Grace,
  • eternal Forgiveness-
  • Divine Love
  • perfect Peace

All of these gifts help us to live as kind, grateful Children of God. May our lives resemble the fleeting beauty of the Dogwood Blossom and the fresh renewal of Springtime. Take us in Your Loving Arms-

  • apply Your Healing Balm to every piercing, every scrape and every scar-
  • smooth out the life lined worry-wrinkles,
  • relieve our feverish anxieties,
  • lift our burdened hearts,
  •  heal our fear-filled, doubt-ridden minds,
  •  place Your cool Hand of Mercy on our wounded souls and
  •  be refreshed as we find our Rest in Thee.

To the One Crowned with Thorns on Calvary’s Cruel Cross, the One Who has overcome Tribulation and is now and forever The Living Water and Earth’s Divine Oasis. Amen. IMG_2591

Camellias of Alabama…

camellia 4 jeremyLong before Spring gets into full swing… Camellias grace the South with their gorgeous blooms. The Camellia is the state flower of Alabama and rightly so, from the southernmost coastal region to the northern border, Camellias thrive. camellia 8 j

An old gardener had a prolific Camellia bush- ‘Yep, she blooms her fool head off, right in the dead of winter all the way to spring.’ I asked the secret of his Camellia- he replied- ‘Well honey, it’s where she’s planted, close to home and always facing South.’ camellia 7 jeremy

Camellias, Azaleas and Gardenias make up the distinctly feminine fragrance of the South.  Native to South China, Japan, Taiwan and South Korea- Camellias are a member of the Tea family- is it any wonder we Southerners love our Sweet Tea and Camellias?camellia 10 jeremy with bug Alabama author Harper Lee put a White Camellia in a supporting role in ‘To Kill A Mockingbird’ and CoCo Chanel elevated the White Camellia to star status as her trademark lapel pin.  camellia 2 jeremy

From glossy evergreen leaves, to tight buds and flowers that open and fall as one whole flower…Camellias are completely non-poisonous. I love this about Camellias- from bud to flower to the shedding of blooms, the Camellia’s motto would be- ‘We rise and fall as one.’ camellia 5 jeremy

Blooming from October to April, Camellias symbolize Love in all Forms, from friendship, romantic love and love of a parent for a child- also Everlasting Devotion and Perfect Unity. camellia 6 jeremy

For me, the Camellia in all of her glory represents blooming despite adversity and the ability to withstand anything with grace and beauty. camellia 3 jeremy

Find Jeremy at http://www.jeremy.miniard.fineartamerica.com. *Camellia Japonica is the most common type grown in the South, there are literally 100’s of varieties- some with the distinctive ‘crown’ in the center and some doubles or single blooms. Azaleas, Gardenias and Camellias all like acidic Southern Soil and enjoy the same growing conditions- however the Camellia is generally the easiest of the three to cultivate in the South. In other regions, above Zone 8-Camellias are reliably grown indoors. The rest of the year, Camellias are a beautiful landscape shrub with dark pointed green leaves- and y’all…one of my favorite things about Camellias is soo like the South I know- Camellias produce nuts!
