Gratitude…

Have you ever gotten a line or two of a song in your head and just couldn’t stop thinking about it? That happens to me occasionally…for instance recently, I kept thinking about this line…‘I hope Life treats you kind..’ from Dolly Parton’s famous song, ‘I Will Always Love You’. Dolly wrote the song when she left the Porter Waggoner Show. Later, Whitney Houston elevated this same song to unbelievable heights and popularity. Country and Pop music fans loved that song! It’s a song about leaving, heartbreak, loss, bittersweet memories and to some extent betrayal.  A sad song really.IMG_0155

Often, when a line from a song or a portion of Scripture stops me in my tracks… I want to sit with it a while…contemplate it. With Dolly’s Song… I let the words run around in my head, moving on to that line about ‘Bittersweet memories…’ Ultimately, in the privacy of my own home- I broke out singin’ it- loud….no, I did not sound like Dolly or Whitney- more like a bad version of Willie Nelson, in case you’re wondering. Then, there was a Scripture, I was reading a devotional recently and a portion of a verse just hopped off the page and stopped me in my tracks-I wanted to sit with it awhile- here it is:

 ‘…the same night in which He was betrayed, He took bread; and when He gave thanks….’  First Corinthians 13:23-24.

 Jesus was betrayed…He shared a meal, He gave thanks. Think about it. Betrayal and Gratitude are puzzle pieces that rarely seem to fit. I wondered, what if it said-

  • ‘And after she lost her job…she gave thanks’  or
  • ‘And after he was put on hospice, he gave thanks…’ or
  • ‘After she was abandoned, she gave thanks…’
  • ‘After his father had beaten him, he gave thanks…’

Think of any emotional damage that causes human suffering. Sit with loss, betrayal, abandonment, physical illness, abuse and heartache for a while. Think of them as Gunshots to the Soul. Now, insert those grave wounds into that same Scripture… Does hosting a meal and giving thanks follow heartache? It hardly seems possible. And yet…there is a deep truth in there. Suffering isn’t convenient- a gap opens up, right in the midst of Living. The Betrayal occurred right in the middle of the Last Supper that Jesus would have with his closest friends;  He continued living, He turned to what remained of His life; gave thanks and resumed the meal. I must be honest here, I am not a big fan of telling folks to count their blessings when they are in the midst of suffering– it seems to add an unnecessary burden onto an already wounded spirit. However, for myself…I have found when I am able to allow light to come into my suffering- turn to what remains- the good that life still offers- it takes the form of gratitude and the healing begins…IMG_0152

Life is hard; it never permanently gets easier. Bad things still happen to good people. Promises are broken and some dreams die.  You cannot go back and make Life different. If you look at the photograph, you will see Crepe Myrtles blooming at the back of our yard. There is a gap between the trees- where a clump of beloved dogwoods used to be- they died this year and were cut down.  I mourned the loss- this area is a Memory Garden. The loss of the dogwoods seemed to be a metaphor for what has already been a year of difficulties-among them, the loss of two sweet friends and my mother. As if to drive the heartache/ gratitude connection home, the crepe myrtles are blooming their heads off! Meanwhile I’ve been staring at the Gap- the Loss. These trees have never bloomed so profusely before this year, maybe the dogwoods were blocking our view! IMG_0156

I took photographs of the heavy blooms hanging down close enough to be at eye level- midst the most incredible blue sky with puffy white clouds- the fragrance was faint and lovely. I had stared so long and so hard at what I had lost, feeling the dogwoods had betrayed the Memory Garden… having bittersweet memories… I realized I was missing the near and present loveliness!  ‘Life was treating me kind…’ Thank you, Dolly. The day after the photographs were taken, to further emphasize the point of the Scripture from First Corinthians which I had been contemplating for days…one of the big crepe myrtle branches heavy with blooms broke.  ‘And the same night He was betrayed, He took bread, and after He had given thanks, He broke the bread…’ Wouldn’t you know? In the sun-filled blue skied day, the truth of Jesus’ actions broke through my mind…instead of dwelling on one more bad thing-I decided to cut the blooms from the broken branch and make something of it! I’m so thankful I did! Just look at the planter shaped like a woman’s head! She’s surely grateful  for the glorious flower-dy hat she’s wearing! Turns out the broken branch isn’t a mortal wound… Life does go on, bright blue skies mingle among the cloudy days- enjoy what you can and when you think of it? Give thanks to God… He will always love you! Have a blessed Lord’s Day!

Southern Sweet Potato Salad…

Recently I attended a Barbeque, most of the side dishes were picnic style- Coleslaw and Classic Potato Salad with Desserts to die for, however one lady who knows how much Southerners love to eat Barbeque with Spicy Greens, Cornbread, Fried Okra, Baby Limas and Sweet Potatoes; brought a wonderful Classic Sweet Potato Casserole with brown sugar, butter and pecans as a thick crunchy topping, oh my! It was wonderful! I started thinking about how good sweet potatoes are with barbeque but also how I had never seen a recipe for Southern Sweet Potato Salad– now, I know recipes are out there but not with completely Southern ingredients! So what you see is rare, here at Camellia’s Cottage, we don’t mess with perfection- we love our classic recipes, we want to preserve the traditions! Yet, I could not stop thinking that a chilled Sweet Potato Salad could be Devised, Concocted or Dreamed Up.  The Pecan Topped Sweet Potato Casserole was my inspiration. (please don’t say – pee-can, we say Pa-cahn)  I began a list of ingredients that are often paired with Sweet Potatoes.

  • My grandmother loved to squeeze fresh Orange juice and a bit of pulp into hot buttered mashed Sweet Potatoes. Then she scooped out and filled the Orange Shells with the Sweet potatoes for a wonderfully fragrant side dish. Citrus is a very Southern ingredient!
  • Of course, Pecans are as Southern as can be.
  • Celery is added to so many Southern Salads, and often include the Tops for crisp crunchy texture.
  • And finally because of our proximity to the Caribbean, Pineapple is often used in Southern  cooking, particularly salads and desserts. in fact it is not unusual to find Pineapple incorporated into a Sweet Potato Casserole.

An idea for a Southern Sweet Potato Salad was Dreamed up, Devised and Concocted.. Southern Sweet Potato Salad

  • Preheat oven to 375º
  • Partially bake or boil one large Sweet Potato. Cut in Cubes, do not peel.
  • Rough chop 1 cup of Pecans.
  • On a parchment lined baking pan, mix cubed Sweet Potato and Pecans.
  • In a small bowl, combine 3 tbs. of Sugar, 1/3 cup of Brown Sugar, a pinch of salt, 1 teaspoons of cinnamon and 1/2 teaspoon of cayenne pepper. Toss sweet potato and pecans with the sugar mixture.
  • Pour 3/4 cup of melted butter over all and spread in a single layer on parchment- Roast this until sugar mixture has caramelized. About 12 minutes. IMG_2986

While the sweet potatoes are roasting, make the Salad Dressing.

  • Combine the zest and juice of one Lime, 1/3 cup of Orange Marmalade, 1 tablespoon of local Honey, 1/4 teaspoon of Cinnamon, pinch of Cayenne Pepper and 1 teaspoon of Apple Cider Vinegar. * This is my all purpose Fruit Salad Dressing and is equally good drizzled over seasonal fruits like strawberries, blackberries and blueberries.

Now, chop one stalk of Celery including Tops. Cut up 3/4 cup or more of fresh Pineapple and 3/4 cup of diced unpeeled Tart Apple. Put Salad Dressing in a large bowl, toss to coat- Celery, Pineapple and Tart Apple. When the Sweet Potatoes and Pecans have roasted, carefully incorporate into the Salad Dressing, Celery, Pineapple. Be sure to include the buttery juices. Southern Sweet Potato Salad is good room temperature or chilled. IMG_2987

Okay y’all, I am going to tell you that my picky Test Taster loved this Southern Sweet Potato Salad with Fried Pork Chops! Now, I will admit this Salad will never reach the heights of glory our Southern Potato Salad has with old and classic recipes. Southern Sweet Potato Salad is certainly unconventional, though it is dependent entirely on Southern Soul Food ingredients, so… it might just end up becoming a new favorite here at Camellia’s Cottage! Summer Whites…

White flowers in the Southern June Garden joyously light up dim evenings and illuminate gray dawns with gladness-

Humble or magnificent, with pure fragrant ease… Summer White Flowers grace our lives effortlessly and without anxiety…IMG_2930

Wish y’all could smell the magnolias, gardenias and honeysuckle blooming right now! If I could- this would be scratch and sniff- it’s unbelievably sweet! Oh the precious sight of  Hydrangeas,

Sea Soaked Cities of the South…

IMG_2766When you live in a Southern Coastal state- the Spring rising of Sap in Southern Pines, the Budding of Magnolias and the Pull of Tide draws us to our Sea Soaked Cities….circling down the powerful Atlantic Ocean- around the Gulf of Mexico, the migration begins.  Cultured beauties give way to ocean drenched dives- dress shoes yield to boat shoes, silk slippers litter closet floors in favor of flip flops- Fishing Vessels pull out of winter storage and Sailboats slip away from docks, soft melodies shift to beach music or jazz.

The Sea Soaked Cities of the South draw us like moths to a porch light. We ignore the heat and humidity in favor of a cobbled street crawl,relish the comfort food, sip tall frosted glasses and speak with slow southern drawls.

  • Charleston’s culture and sophistication with her bubbling fountains, South of Broad mansions where no woman would be caught dead sitting on the front porch in housecoat and curlers to magnificent church spires of the Holy City, folks are drawn in carriages or mesmerized by soft sea grass baskets, lured by creamy brown pralines or shrimp and grits- but it is the Battery or harbor with it’s sea-going vessels that tug at our hearts.
  • Savannah’s Squares, wonderful Historic Town Homes with lush gardens, the whispers of posh garden parties or Midnight’s Good or Evil enchants us- the sight of the water  ultimately pulls sea searching souls to haunts on the wharf and huge cargo ships which still the hearts of mere mortals. The Atlantic pulls folks to barrier islands, marshes and beaches.
  • Key West’s Sherbet Painted Ladies and Ocean Drinking Dives, Street Performes, Tall Ships and gasp worthy Sunsets soothe the soul.
  • Mobile has her own sophistication amidst azaleas, southern genteel ladies and gentlemen with unfailing civility; across Mobile Bay- beautiful Bay Houses with names like Restoration overhung with massive live oaks sporting long gray beards; small towns with quaint cottages in Daphne, Fairhope, Point Clear and Magnolia Springs.
  • White Sugar Sand Beaches on the Gulf of Mexico pull us out of our winter doldrums from spring to fall. Ocean Drenched Dives, the promise of warm sunshine draw us to Gulf Shores, Perdido or Orange Beach.
  •  New Orleans’ Garden District is genteel, yet it’s the black lace balconies in the French Quarter, the smell of chicory coffee and fluffy beignets near the Waterfront that draws folks into a different state of mind.

What is it about the presence of a large body of water that heals and renews? There is a powerful spiritual energy at work in the Sea Soaked Cities of the South.  Is it the presence of long lost spirits or the tidal magnetism? More than a dozen years ago, in the pointed boot of Texas’ own Sea Soaked City- Galveston- I found these Old Men of the Sea tossed like conch shells on a dusty shelf in a Nautical Repair Shop near the ocean- with no idea what I would do with them I had to have them- Dried Bamboo Roots with Carved Bearded Faces. I mounted them inside the round frame like a porthole to remind me of my own love of the seashore. IMG_2770

I rarely remember a summer of my life without at least one trip to the Beach- building sandcastles, stooping for shells or tiptoeing in the edge of the ocean- ever aware of undertow warnings or the way it felt to have sun tipped shoulders or new freckles on my nose.  The salt air settles into our minds; like mystical memories there remains the longing to go back and back- to the gulf’s bounty of fish, oysters, blue crab and pink shrimp made a hundred delectable ways, swimsuits damp with sea water- bright umbrella-ed beach chairs with her giggles shared or beach books read; the glimpse of a glimmering dolphin, the tiny translucent sidewalking sand crabs or a long leg-ged white egret standing silent on a dock ; the soft  pungent smell of salt water, the life restoring sea air, the feel of sand between my toes. Ocean Drenched Dives and Sea Soaked Cities of the South with her bayous, bays and beaches seem as

  • Confessionals and Cathedrals
  • Altars and Alcoves-
  • Shell Crusted Grottoes with Screeching Sea Gull Pipe Organs

We slow down, contemplate, let our minds go blank for a spell. Just let me start getting out summer beach bags and there will be errant grains of sand and an inevitable seashell- rubbed between my fingers, mindlessly looking for the sharp broken hinge. Ridiculously, I let myself think that the other half of the seashell or an errant piece of myself might be found if I return to the shore. Always convinced- it’s that pull of the tides, the magnetism of foamy waves ever running toward to the beach and back out  toward the shimmering horizon that gives me a longing for the Sea Soaked Cities of the South. I’m heading there soon…
